Over here at our Chocolate Kitchen in South Yarra, our pastry chefs are always looking to innovate and for the past couple of weeks, they have been hard at work, adding new twists to our classics and experimenting with new ideas. To kick off the new month, we’re incredibly excited to share with you five of their creations.
Salted Caramel – A Winter Love Affair
Winter brings about a love affair for salted caramel, its combination of sweetness and saltiness is certain to tingle the senses. Knowing this, our chefs have come up with two new additions to our patisserie family – say hello to the salted caramel popcorn and salted caramel apple desserts!
Salt Caramel Popcorn
Popcorn is so versatile, and combined with salt caramel, it’s a perfect marriage of two. Think Vanilla cream mousse encasing a salted caramel anglais, along with strawberry sponge and a freeze dried strawberry centre, topped with caramelised popcorn and coconut. Throw in some popping candy and you have a delicious dessert!
Salt Caramel and Apple
Autumn may have just passed, but you can still continue to reminisce and experience the warmth and beauty of the season through our Salt Caramel & Apple slice. Inspired by the European autumn, this gluten free dessert is made up of light salted caramel mousse with an apple jelly centre on a bed of chocolate rubble. Just what you need on a cold winter’s day, don’t you think?
Fresh, fun twists to our classics
On top of creating new recipes, our pastry chefs have also added new fun twists to our classics.
We are absolutely loving this new look, which we believe truly reflects the character of the raspberry mousse: Light, fluffy and now completely dairy free, this little slice of heavenly fruitiness is the perfect pairing to your favourite choice of coffee, with dark chocolate mousse made in Italian style and a hidden surprise in the middle.
If you’ve ever had difficulty choosing between milk, white and dark chocolate, then our triple mousse is for you. Combining the three in classic chocolate mousses, they are layered to create a delicious contrast in flavours, sure to leave you with a smile as you finish your last bite.
Our lemon tart has always received a lot of love, and something tells us it’s going to receive extra love with this little makeover. Think creamy lemon curd in a light pastry shell along with vanilla European Chantilly, with toppings of freeze dried raspberry crumble to create the perfect balance in texture. Not only does it look divine, but tastes absolutely delicious – what more could you ask for?
